做法﹕
1. | 蝦剝殼後從背部切開抽出泥腸,再用清水沖洗掉粘液。用紙巾將蝦擦乾。撒上1/4小匙鹽和1/8小匙黑胡椒拌勻。 |
2. | 平底鍋燒熱後,加入橄欖油和牛油。等牛油融化後加入蝦並用中大火煎90秒,當中不要移動蝦。 |
3. | 將蝦翻面後,轉小火並加入蒜末,檸檬汁,1/4小匙鹽和1/8小匙黑胡椒。繼續煮2分鐘,或煮到蝦熟透。放進巴西利葉略拌。 |
4. | 夾出蝦到盤子裡,再將鍋裡剩餘的醬汁淋在上面。 |
PROCEDURE:
1. | Clean and shell the prawns. Make a slit on the back of each prawn and devein. Dry them with paper towels. Sprinkle with ¼ tsp of salt and 1/8 tsp of black pepper and mix. |
2. | Add the olive oil and butter in a heated pan. When the butter is melted, add the prawns and pan-fry over medium-high heat for 90 seconds. Do not move the prawns. |
3. | Flip the prawns over. Turn the heat to low and add the minced garlic, lemon juice, ¼ tsp of salt and 1/8 tsp of black pepper an d cook for another two minutes or until the prawns are done. Mix in the minced parsley. |
4. | Transfer the prawns to in plate. Spoon the sauce remaining in the pan all over the prawns. |
